Tomato-vinegar marinade for skewers of meat

Ingredients (for 1.5 kg of meat):
- 1 tbsp. ketchup;
- 1/2 Cup wine vinegar and vegetable oil;
- 4 cloves of garlic;
- 2 tsp Russian mustard;
- 1/2 tsp of black pepper;
- 2 tbsp of cane sugar;
- 1 tsp of salt.

Peel garlic and crush in a special press. Connect it in the bowl to marinate with ketchup and vinegar, vegetable oil and mustard, and sugar, salt and pepper. Give everything a good stir to dissolve granular ingredients, beat with a whisk. Set aside 1/4 of the resulting mass to lubricate the meat during cooking. Soak the skewers in the marinade, tighten with cling film and leave for 4-8 hours in the refrigerator.

Mineral marinade for skewers of meat

Ingredients (for 3 kg):
- 1 liter of carbonated mineral water;
- 1 kg of onions;
- 2 tbsp of spice for shashlik (oregano, thyme, rosemary, pepper, etc.);
- 1.5 tbsp of salt.

Remove the husks from onions, finely slice them and mix with meat cubes. Fill them with mineral water and soak in the cold for 10 hours. Drain the liquid, remove the onion, sprinkle skewers with salt and spices and mix thoroughly with your hands. Let stand for another half hour while preparing the coals.

Kefir-based marinade sauce for grilled poultry

Ingredients (for 2 kg of meat):
- 1,5 tbsp. of yogurt;
- 3 tbsp vegetable oil;
- 1 green chili pepper;
- 2 cm ginger root;
- 2 cloves of garlic;
- 1 tbsp of cumin and coriander;
- 1.5 tsp. of salt.

Chop the ginger root and the chili pepper with a knife, pound in a mortar the garlic cloves. Shake all with yogurt, vegetable oil, spices and salt. Put in the marinade the pieces of the bird and soak them in it for 8 to 12 hours.

Universal beer marinade for skewers of meat and poultry

Ingredients (2.5 kg):
400 ml of light beer;
- 2 tbsp of honey and apricot jam;
- 2 cloves of garlic;
- 1 tsp. mustard;
- 1 tbsp of ground paprika;
- 1/2 tsp. allspice pepper;
- 2 tsp of salt.

Heat the honey and marmalade, then stir in the grated garlic, mustard, pepper, paprika and salt. Let the mixture cool and pour beer. Mix not too vigorously to not come out all the gas. Soak in the beer marinade meat or poultry for 4-6 hours.

Special marinade for skewers of fish

Ingredients (for 1.5 kg):
- 1 tbsp. soy sauce;
- 1 1/3 cups dry wine;
- 1/2 Cup of olive oil;
- 3 cm ginger root;
- 30 g coriander;
- 2 tablespoons of sugar and four pepper (green, black, white and red);
- 1.5 tsp. of salt.

Finely chop the cilantro and ginger root. Connect them in a pot with wine and soy sauce, olive oil, salt, sugar and spices. Marinate fish in this mixture for half an hour.
