Braised liver with pickles

To prepare this dish, is built on an unusual combination of taste of the liver and pickles, you'll need the following ingredients (for 3-4 servings):
- 500 g of liver (beef, chicken, duck, Turkey, goose);
- 100 g pickled cucumbers;
- 100 g onions;
- 100 g carrots;
- 500 ml of milk;
- 2 tbsp flour;
- vegetable oil;
- salt, pepper (to taste).

Keep in mind that the cooking time depends on the liver you take. Usually chicken, goose, Turkey and duck cook faster. Cooked to this recipe the liver turns out very tender and almost melts in your mouth.

Initially you need to prepare the livers: rinse, remove the film and various veins, and then cut into small pieces.

Onions clean and chop, fry in a pan with vegetable oil until Golden brown. Meanwhile, wash, peel the carrots and grate on a fine grater, add carrots to the onions, fry.

Pickles rinse, slice and add to the pan, sauté for a few minutes with the other vegetables. Put into the pan the liver and fry, stirring constantly, do not forget to salt and pepper. After 5 minutes, you need to pour the milk so that it completely covered the liver. Close the pan with a lid and simmer for about 15 minutes.

The dish turned out to thick, you need to add flour, which previously should fry without oil until Golden caramel color. Continue to simmer for 10-15 minutes. Braised liver with pickles ready, it can be served hot with various toppings.

Salad of liver with cucumbers

It turns out delicious and hearty salad from the liver and cucumbers for cooking that you will need:
- 150 chicken liver;
green onions — 1 bunch;
- fresh cucumbers — 3-4 pieces.;
- eggs — 3 PCs.;
- 1 tsp lemon juice;
mustard, sauce (to taste);
- vegetable oil;
- salt, sugar (to taste).

In lightly salted water, boil the chicken liver for about 20 minutes, which must be soaked in milk for 25-30 minutes. Soak the liver needs in order to be sure that it will not taste bitter in the salad. Then drain the water, and the liver dry.

Fresh cucumbers wash, peel and cut into strips. In that case, if you have a large cucumber with the seeds, it is best to remove the seeds. Green onions wash and finely chop. Boil hard boiled eggs, then peel and cut into cubes.

For the salad you need to cook the sauce. In a blender connect the raw egg yolk, any sweet and sour sauce, lemon juice, salt and sugar, whisk, then pour in 1 tbsp vegetable oil and whisk again. As a result, you'll make a thick sauce of yellow color, similar to a conventional mayonnaise.
