How to select and prepare scallops for cooking

Choose scallops, frozen way of shock freezing or icing. The house put the seafood in a mixture of cold water with milk in a 50/50 ratio by about 30-40 minutes. If scallops keep in the water longer, they will lose their delicate flavor. Further, the seafood can be fried, steamed, pickled or eaten raw.

Fried scallops

For the preparation of 3 servings of this delicacy you will need:
- 500 g frozen scallops;
- garlic — 2 cloves;
- 5-6 tbsp of olive oil;
- lemon juice;
- parsley — a pair of beams;
- salt (to taste).

To start prepare the marinade for the scallops: finely chop the parsley, clean the garlic and squeeze through chesnokodavilku, drizzle with olive oil. Seafood defrost naturally, then put in the marinade and leave for 30-40 minutes to be soaked.

Strongly heat up the pan with olive oil over high heat, and before you put the scallops, turn down the fire. Fry the scallops on each side for about 3 minutes, do not forget to add salt. Fried scallops are ready, place them on a plate and serve with any side dish.

Scallops in Chinese

This recipe of scallops was borrowed from Chinese cooks. The dish in the result will have a very unusual taste and aroma. Instead of the usual Chinese food soy sauce the recipe suggests the use of balsamic vinegar.

You will need the following ingredients (for 3-4 servings):
- 500 g scallops;
- garlic — 1-2 cloves;
- 4 tbsp balsamic vinegar;
- 30 g of ginger;
- arugula — 1 bunch;
- cilantro — 1 bunch;
- 1 tbsp olive oil;
- salt (to taste).

Prepare scallops: defrost and rinse under cold water. Clean the garlic and crush them with chesnokodavilku, finely chop the ginger and cilantro. Heat a pan and add the olive oil, put garlic, ginger and sauté for a few minutes, and then add the prepared scallops.

Fry the seafood for 2-3 minutes on each side, at the end of cooking add balsamic vinegar, cilantro, salt and continue to simmer for another 1-2 minutes. That the meat is ready, you will prompt a caramel taste and a sharp nutty smell. Prepared scallops serve with rocket salad or any other salad.
