Coffee cream cake with butter
You will need:
- a Cup of sugar;
- 100 ml of milk;
- one egg;
- 250 grams of butter;
- tablespoon of ground coffee;
- 100 ml of water.
Put a spoonful of coffee into a Cup and pour 100 ml of boiling water. Wait for about 20 minutes, then strain the coffee through cheesecloth (best to use a cheesecloth, folded in several layers).
Obtained strong coffee pour into the pot, add the Cup of sugar and 100 ml of milk, bring the mixture to a boil.
Whisk the egg and a small trickle pour it into coffee mix, trying to mix thoroughly. Cook the mixture for about two minutes, then remove from the heat and let cool to room temperature.
Mash the butter (after it need for three to five hours, hold at room temperature) and mix it with the coffee mixture. Whisk the cream with a mixer until smooth (its volume should increase approximately twice).
Coffee cream cake cream
You will need:
- 200 ml strong coffee;
- three tablespoons of sugar;
two egg yolks;
- two tablespoons of flour;
glass 25-30% cream;
- 50 grams of butter.
A tablespoon of sugar lightly fry on a pan (without oil), add it to coffee and cook the syrup (cooking time is about three to five minutes).
Whisk the egg yolks with the remaining sugar (two tablespoons), add the flour, mix all with chilled cream.
Put the prepared mixture in the saucepan, add the coffee syrup and warm up the cream until thick. Remove the cream from heat and let cool.
In chilled cream add the softened butter and carefully beat with a mixer.
