Grilled vegetables in oven

To prepare this delicious and healthy main dish you will need:
- zucchini — 1 PC.;
- eggplant — 1 PC.;
- sweet Bulgarian pepper — 1 PC.;
- 200 g mushrooms;
- 30 ml sunflower oil;
- salt and ground black pepper (to taste).

Wash all the vegetables (zucchini, eggplant, peppers) and mushrooms and then leave them at room temperature for desiccation. Mushrooms cut into slices of medium thickness. If you have large mushrooms, each cut into 4 pieces. Do peppers remove the core and the tail, cut it into slices. Zucchini cut into either thin slices or cubes. In the same way you want to cut the eggplant.

Preheat the oven to a temperature of 180oC. On the grid for roasting pan, place all vegetables. - eggplant — 2 pieces;
- zucchini — 2 PCs.;
- sweet Bulgarian pepper — 2 PCs.;
- 300 g of mushrooms;
- garlic — 2-3 cloves;
- 50 ml olive oil;
25 ml Apple vinegar;
- 50 ml balsamic vinegar;
- 2 tbsp soy sauce;
- 1 tsp ground paprika;
- salt, pepper (to taste)

For cooking spicy marinade combine olive oil, soy sauce, balsamic and Apple cider vinegar, ground paprika, ground black pepper and squeezed with chesnokodavilke garlic. The marinade needs to sit for about 2 hours.

Meanwhile, prepare the vegetables: eggplant, pepper and zucchini, wash and cut into large cubes. If you want your dish looked beautiful, then take red and yellow bell pepper. Cut the mushrooms.

All the vegetables and mushrooms put in a deep bowl and cover with marinade, mix well. You need to marinate about 30 minutes. Then the vegetables and mushrooms put on the grill and send in a pre-heated oven for 30-40 minutes. After turning off the oven the vegetables are cooked and serve immediately to the table and give them some time to steep. Bon appetit!
