Dried mushrooms should be rinsed thoroughly to remove possible dirt and sand. If you plan to make soup for dinner, then preparing the mushrooms should begin early in the evening. Pour the mushrooms in two liters of water and leave overnight to soak.

Tomorrow's soup cook faster, barley can also be soaked in cold water over night.

If you have washed the mushrooms before soaking, boil them in the water in which they stood all night. This soup will have a rich taste. Put the saucepan on the stove, add the cleaned, cut in half onion and cook for 40-45 minutes.

Strain the mushroom broth into a clean pot, discard the onion, mushrooms, set aside. Drain the barley, put the groats in a saucepan with the broth, simmer for 20-30 minutes.

In a pan saute the onion with the carrots, add the vegetables to the mushrooms, saute all together for 5 minutes.

In a pot, which is cooked barley, add the vegetables with mushrooms, potatoes, salt, allow to boil soup the last 20 minutes.

Soup of dried mushrooms is very thick and nourishing. Serve it sprinkled with herbs, and adding a dollop of sour cream in each bowl.
