You will need
- butter 200 g;
- flour 2 cups;
- sugar 1 tsp;
- water 1/2 Cup;
- salt 1/4 tsp.;

In advance, remove the butter from the refrigerator and let it thaw at room temperature. The butter should be soft, to resemble the consistency of soft clay.

Sift the flour through a sieve onto the work surface. Cut the butter into small pieces and place it on the flour. With a knife chop the butter and the flour until then, until all the butter is covered with flour.

Stir salt and sugar in cold water until dissolved. The resulting solution was pour into the flour and butter and quickly knead the dough. The obtained dough cover with a damp towel and store in the refrigerator for at least 1 hour. If possible, you can leave the dough in the fridge overnight.

Remove the cooled dough from the fridge. On a work surface sprinkle some flour so the dough doesn't stick. With a rolling pin roll out the dough to a thickness of 1 cm, giving it the shape of a rectangle. Fold the dough 2 times and re-roll it to the initial size. Put the dough in the fridge for 10-15 minutes.

Remove the dough from the refrigerator. Again fold the dough 2 times and roll it to the initial size. This procedure can be repeated up to 6 times. When your dough is ready you can immediately begin to make pastries, but you can store in the freezer.
