Baked zucchini with minced meat: the recipe



Ingredients:
- 1.2-1.5 kg of young zucchini;
- 600 g pork;
- 400 g beef or veal;
- 1 chicken egg;
- 4 tbsp of rice;
- 1 carrot;
- 1 onion;
- 1 tomato;
- 50 g of hard cheese savoury;
- 3 sprigs of dill and parsley;
- 1/3 teaspoon of black pepper;
- 2.5 tsp salt;
- vegetable oil.

If you prefer to use for stuffing vegetables, only lean meat or poultry breast, place stuffing in a spoon of sour cream to make it more tender.
Bring to a boil the rice. Wash the pieces of pork and beef, dry them with a paper towel, cut into large cubes and mince. Clean the bulb from the husk, shred and divide into 2 portions. Add to the mince half an onion, boiled rice, chopped greens, pour the egg, stir in ground pepper and 1.5 tsp salt. All carefully stirred, preferably with your hands so all the components were distributed evenly.

If the stuffed zucchini turned out to be too much, place the part on a tray or flat plate, wrap with cling film and freeze for the future.
Cut off zucchini skin and cut each crosswise into 2-4 thick circle. Carefully cut them from the core. Set aside the pulp, and the remaining "Cup" without a bottom fill with stuffing. Pack the stuffing tightly enough, so when cooking stuffed vegetables is not deformed.

Make an aromatic sauté for a main dish. Grate the carrot, cut the tomato and the Central part of the zucchini into small pieces. Preheat a frying pan vegetable oil and fry in it the remains of the onion for 2 minutes. Put to him the rest of the vegetables, salt to taste and simmer for 10 minutes under the lid, subtract the heat to the minimum. Don't forget to periodically stir the impending mass with a wooden spoon or spatula.

Set the temperature in the oven, 180oC equal. Take a deep baking tray or ovenproof form and RUB the inside with vegetable oil. Put raw zucchini with the stuffing and place the contents of the pan, filling in the empty spaces between the "cups". Bake the dish for 40-50 minutes. Sprinkle it with grated cheese after half the specified time. Serve 2-3 rings with meat on each portion of the plate along with vegetables and fresh cream.
