You will need
  • For the broth:
  • the chicken is 1,5 kg;
  • - carrots - 1 PC.;
  • - onion - 1 PC.;
  • - salt - 1 tbsp. spoon;
  • - black pepper peas - 4 PCs.;
  • water - 3 liters;
  • protein - 2.
  • For 1 baking tray of profiteroles:
  • - flour - 80 g;
  • - butter - 60 g;
  • - water - 125 ml;
  • salt - 1/4 tsp;
  • - egg - 2 PCs.
In a saucepan, pour water, add salt. Put on a moderate heat. Throw into the pot the chicken and cook it for 4-5 hours, until it starts to protectice fork.
Preheat the oven to 200 degrees. While oven heats, peel and cut into large chunks the onion and carrot. Sprinkle them with vegetable oil and put in the already heated oven until they are lightly browned.
Take the eggs. Separate the yolk from the white, we only need protein. Put our protein in a Cup of 200 ml, and pour cold water in mug to the edge. Mix well.
When the chicken is ready, remove it from the resulting broth. More we won't need it.
Remove the vegetables from the oven and toss them in the finished soup. There pour, constantly stirring slowly, proteins. Cook for another 20 minutes. When the squirrels will be going on top of the broth, you will need to remove them with a slotted spoon.
The next step is to degrease our broth. We'll use paper napkins or towels. Unfold the napkin and lay on the surface of the broth, hold one corner. When the cloth gets wet, pull it over the corner. Next take the cloth and do the same. While the fat will not disappear.
More to the broth transparent, it is necessary to strain through cheesecloth (4-5 layers) in another pot. The broth is ready.
Go to the profiteroles. In a saucepan boil water, add salt and oil. Stir until dissolved.
Pour the flour into the pan and mix well so lumps were not. After the building was occupied by a flour, and the dough gathered into a ball, remove the pan from the heat. Let cool a bit and mix up the dough balls to a well-intervened.
Now you need to preheat the oven to 180 degrees. Cover the baking pan with baking paper and grease it with oil. Steals the dough on a baking sheet, forming profiteroles with a spoon or using a pastry bag.
Bake the profiteroles should be 15-20 minutes. When they cook they need to be cool.
When everything is ready. Pour into a bowl the broth, throw profiteroles and enjoy the taste.
