Warm salad with shrimp



Delicious salad with fried shrimp can become a snack or a separate dish for a light dinner.

You will need:

- 10 large prawns;
- 0,5 of pink grapefruit;
- olive oil for frying;
- a bunch of arugula;
1 teaspoon rice vinegar;
- 1 tbsp of soy sauce;
- a few feathers green onions;

Defrost shrimp, arugula wash and dry. Grapefruit will clean, disassemble into slices and each release from the film. Divide the slices into 2-3 pieces.

In a deep frying pan, heat the olive oil and place shrimp. Fry them on all sides, about 2 minutes. Then add chopped green onion, pour in the soy sauce. Stir fry everything until cooked and complete evaporation of the sauce. Put the shrimp on a separate plate, in the pan, pour in rice vinegar, add salt and olive oil. Stirring occasionally, heat the mixture for 1 minute.

On a dish lay coarsely torn arugula leaves. On top place the prawns, pour over them a sauce of oil and vinegar and garnish with slices of grapefruit. Serve with toasted white bread and a well chilled rose wine.

Shrimp salad with avocado and sauce-mousse



This salad is served well chilled. It is quite high in calories, so portions should not be too large.

You will need:

- 500 g of frozen shrimp;
- 1 white grapefruit;
- 0,5 avocado;
- a few lettuce leaves.

For the sauce-mousse:

- 1 egg;
- 3 tablespoons of lemon juice;
- 30 g of butter;
- 2 tablespoons of cream;

- freshly ground black pepper.

Prepare the sauce. Put an egg into a bowl, add the lemon juice, salt and pepper. Place the bowl onto a pot of boiling water. With a whisk beat the mixture until smooth and thick. Then remove the sauce from heat and continue whisking, adding the pieces of butter. Pour in the cream. Put the sauce in the fridge for half an hour.

Peeled shrimp blanch 5 minutes in boiling water. With ripe avocados, remove the skin, chop the flesh cubes. Grapefruit disassemble into slices, remove the film. The slices break into pieces. Fold the avocado, shrimp and grapefruit in a bowl.

Dish cover pre-washed and obsushennye lettuce. Pour sauce a mixture of avocado, grapefruit and shrimp, stir, and then put his slide on top of the leaves. Serve a snack to the table. The dish can be decorated with grains of pink pepper.
