You will need
- To make baked ribs boar:
- spare ribs wild boar - 1.2 kg;
- garlic - 1 clove;
- vegetable oil - 4 tbsp. spoons;
- greens
- salt
- pepper - to taste.
- To prepare roasted leg of wild boar:
- the front leg of wild boar – 1 piece.
- onions - 2 heads;
- carrots – 2 PCs.;
- garlic – 1 clove;
- dry red wine – 1 glass;
- pepper – 5-6 peas;
- Bay leaf – 4 PCs.;
- olive oil – 200 ml;
- black pepper and salt to taste.
- To make baked wild boar meat:
- roasted wild boar – 1,5 – 2 kg;
- onions – 2 heads;
- carrots – 3 PCs.;
- celery root – 2 PCs.;
- vinegar – 0.5 cups;
- Bay leaf – 3 PCs.;
- flour – 0.5 cups.

Roast ribs of wild boarRinse ribs, salt and pepper them. Then take the meat punctures, to lard with garlic. Brush the meat with vegetable oil and wrap it in foil. Put the ribs on a baking sheet and bake them in the oven, preheated to 180 degrees, no more than 3.5 hours. Then remove ribs from foil and serve.

Roasted leg of wild boarpreheat oven to 180 degrees. Also in a pan, heat the olive oil and sauté the meat until nice and brown on all sides. Cut large onions and carrots. Fried meat put it in a deeper bowl for baking. In frying pan where you fried the meatin the remaining juices and fat sauté the vegetables with spices. Then add the sauteed vegetables to the meat, pour a glass of wine and a glass of plain water. Cover the bowl with foil, preferably a double layer, and put in the oven for 2 hours to 2.5. Once the meat is ready, remove it from the dish and leave for 30 minutes aside. It should also be covered with foil. Part of the liquid, which was formed at the bottom of the dish, pour in a small saucepan and place on high heat and add the roasted vegetables. Cut meat into thin slices and pour the cooked vegetables with the sauce.

Baked meat of a wild boar, Clean the meat from the skin. Boil in a deep container with 1 liter of water. Finely chop the onion, carrot, celery and parsley. Fill it all boiled water and vinegar, add the Bay leaf and black pepper. In the marinade put the meat and allow to stand for 40 minutes. Then put the meat on a baking tray, preheated, and pour the remaining marinade. Cook in the oven for half an hour. Then flip the meat and cook until fully cooked. After cooking, cut the meat slices and divide into required number of portions. Pour the vegetables from the marinade the meat juice left on the baking sheet, sprinkle with flour and boil. Season with salt and sugar to taste. Optionally, you can add lemon juice and mustard. You have a sauce.
