You will need
- 400 g salmon fillet;
- 1 tbsp olive oil;
- 2 tsp lemon juice;
- 100 g of rice;
- 1 tbsp. butter;
- 1 piece of leek;
- 100 ml cream (20%);
- 2 tbsp dry white wine;
- 2 tsp. red caviar;
- small bunch of fresh dill;
- salt
- ground black pepper.

Fillet of salmon defrost, rinse under cold running water, peel with a knife. Dry fillets with a paper towel or plain, cut into serving pieces, salt, pepper and drizzle with lemon juice.Preheat the oven to 180-200 degrees.

In a saucepan, pour 2 cups of water, salt and bring to a boil. In boiling water pour the washed rice and cook 20 minutes until tender. Cooked rice drain in a colander.

Leeks, clean and finely chop the white part and some green part. In skillet, heat butter. The leeks fry on medium heat until transparent, about 3 minutes.

In the fried onions-add the leeks, stirring occasionally, white wine. Then pour in the cream. Bring the sauce to a boil and soak for 2-3 minutes on medium heat. Salt and pepper sauce.

Into the sauce put sliced fillet of salmon. On top of the fish sprinkle with finely chopped fresh dill. The pan cover and put in preheated oven. Cook the fish for 20-25 minutes.

Fillet ready remove from oven and let cool slightly in the pan, without removing the cover. To warm the sauce add the caviar and mix gently.

On a flat plate place a small mound of rice, a fillet of salmon and pour the sauce. The finished dish garnish with fresh herbs and lemon wedges.
