Recipe for creamy fillings
Stuffed wafer rolls can oil, protein or custard. Each of them is able to give the dessert a special taste, aroma and color (if you enter in creams of various additives, and food coloring).
To make butter cream with milk and eggs, it is necessary to take the following components:
- 1 Cup of sugar;
- 2 eggs;
- Thin ½ Cup of milk;
- 200 g of butter.
First of all, well grind the sugar with the eggs. Heat the milk to lukewarm and gradually, tablespoon, add to sugar-egg mixture, stirring constantly. Then put the resulting homogeneous mixture on a quiet fire and, without ceasing to interfere, bring the mixture to a boil, then remove from heat and let cool to room temperature. While the mixture cools, start whipping the soft butter. Not stopping to whisk, small portions add to the butter mixture Stavrou. When a homogeneous mass, it is possible to add aromatic substances.
Perfect as a filling for the wafer tubes into the custard. For its preparation you will need:
- 2 cups of milk;
- 1 Cup of sugar;
- 2-3 eggs;
- 2 tbsp flour;
vanillin;
- 50 g of butter.
The custard is recommended to cook in an enamel saucepan with a heavy bottom.
Pour in an enamel pot milk and put on quiet fire. While the milk heats, mash in a bowl the eggs with sugar until smooth. Then put the resulting flour and give everything a good stir to avoid lumps. Then reduce the heat to low, and begin to pour small amounts of hot milk to the prepared mixture, carefully stirring. When connect with a lot of 2/3 milk, pour contents of the bowl into the saucepan with the remaining milk. To flour brew without lumps, and the cream is not burnt, does not cease to interfere, and fire do not increase. When the cream thickens to desired consistency, turn off the heat and add the butter. While it melts, continually stir the mass. Then let the cream cool down and then put the vanilla or lemon zest, orange.
Recipe nut filling
Wafer rolls can be filled not only with cream and fruit or nut fillings. To prepare the filling from the nuts will need:
- 1 ½ Cup walnut kernels;
- 1 Cup of sugar;
- ¼ Cup of honey;
- ¼ Tsp ground cinnamon or cardamom.
Peeled walnuts through a grinder / Mincer. Then add sugar, cinnamon or powdered cardamom and honey. All mix thoroughly until a homogeneous mass, which then begin ready wafer rolls.
Walnut stuffing can be cooked in another recipe. For it will need:
- 1 Cup of walnuts;
- 2/3 Cup of sugar;
vanillin.
Vanilla, if desired, can be replaced with cinnamon or crushed cardamom.
Walnuts clear, select the kernel and mash them in a mortar. Then mix them with sugar and lightly fry on a dry pan. Then add the nut-sugar mixture, vanillin on a knife tip and a little water to get a viscous mass. Put the prepared nut weight on the finished, still warm, waffles and roll them into tubes.
