Pancakes is a traditional Russian dish, which is associated with wonderful and fun holiday carnival. But cooking pancakes sometimes takes a lot of time, and to taste this treat all the same really want. In this case, the ideal option would be thick pancakes that can be baked very quickly.
How to cook thick pancakes
You will need
    • Pancakes with apples:
    • 2 eggs;
    • 0,5 l of kefir;
    • flour;
    • half a teaspoon of baking soda;
    • vinegar;
    • vanillin;
    • 3-4 tbsp of sugar;
    • salt;
    • 1 Apple (or a handful of raisins).
    • Yeast pancakes:
    • 2 eggs;
    • 2 tbsp sugar;
    • 1 kg of flour;
    • 40 g yeast;
    • 3 tbsp. butter;
    • 0.7 l of milk;
    • salt.
    • Savoury pancakes:
    • 3 eggs;
    • 4-5 tbsp of sugar;
    • 0.5 liters of cream;
    • half a teaspoon of baking soda;
    • flour;
    • salt
    • cinnamon
    • vanilla to taste.
Recipe No. 1. Eggs slightly vzbit with sugar, pour in the yogurt mixture and stir thoroughly. Add soda, slaked vinegar, vanilla, and a pinch of salt. Then small portions add the flour, stirring intensively, in order to prevent the formation of lumps. The result should be a dough consistency resembling thick cream. Apple peel, remove core and cut into small cubes, add to the dough. Instead of Apple you can use raisins, or combine both – be guided by your taste. On a hot pan pour sunflower oil and occasionally add it during cooking. You can completely fill the bottom of the pans either make the pancakes small diameter. Serve with honey or sour cream.

Recipe No. 3. Mix the egg yolks with the sugar, add the cream, vanilla, soda, salt and cinnamon, mix well. Gradually add the flour, to make dough, the consistency resembles liquid sour cream. Separately, whip the whites and add to batter, mix thoroughly. Bake pancakes in vegetable oil.

  • - 3 eggs;
  • - 350 ml of milk;
  • - 300 g flour;
  • - 60 g of butter;
  • - ½ Tsp salt;
  • - 2 tbsp of sugar;
  • - 2 teaspoons of baking powder.
  • For lush pancakes on kefir:
  • - 5 eggs;
  • - 2 cups of kefir;
  • - 2 cups of flour;
  • - 100 g of butter;
  • - ½ Tsp sugar;
  • - ½ Tsp salt;
  • - 1 teaspoon baking powder;
  • vegetable or ghee.
Lush pancakes on milk

Butter, melt on low heat. Connect the sifted flour with the baking powder. Then mix in a blender eggs, milk, flour with baking powder and about 30 g of melted butter into a homogeneous mass. Put the mixture into a small bowl and refrigerate for an hour, but preferably overnight. Before use, mix again, whisk thoroughly.
Place a non-stick pan on a medium heat, brush with melted butter, put a tablespoon about 60 grams of the dough and spread it on the pan, layer about half a centimeter. Bake the pancake for a minute or until, until top sets and the bottom are brown. Then lift the pancake with a spatula, turn and bake the other side for 30-50 seconds. Then put on parchment paper. Bake all the pancakes, every time greasing the pan with melted butter. To the table serve the pancakes with honey, sour cream, syrup or jam.
Fluffy pancakes with kefir

Butter pre-melt and cool to room temperature. Carefully separate the yolks from the whites and combine the yolks with the melted butter and sugar. Whisk all with a mixer until smooth and stir in baking powder mixed with flour. Mix well and add yogurt (if desired, it can be replaced with yogurt). To avoid lumps, introduce the yogurt gradually, in small portions, stirring all thoroughly. Chilled whites beat with a mixer together with salt in a thick lush foam and connect with the main mass. You should get a fairly thick batter.
Heat a pan on medium heat, brush with vegetable or melted butter, then place 2-3 tablespoons of cooked dough, spread it on the pan with a layer of about ½ inch and bake the damn first one side and then flip and brown on the other.
If pancakes are prepared from dough, then after it will work, more the dough is mixed. Otherwise the pancakes will lose their fluffiness.
Useful advice
Proteins are recommended to beat in a completely dry glass or copper bowl. The aluminum pan fibers darken and the enamel can fight off the enamel, so such dishes should be avoided.

Whites whipped well if they are fresh and chilled. Beat them in a cool place, it yolks pounded with sugar in a warm place.
