    • 4 bananas;

    • 3 tablespoons of lemon juice;
    • 1 / 2 Cup banana liqueur;
    • 1 / 2 Cup dark rum or brandy of good quality.

To caramelize choose large solid yellow bananas. Little green fruits are unripe, they can give the dish a bitter taste. Soft bananas will not be able to retain its shape during cooking.

Peel the banana from the peel. If you are going to serve bananas as a separate dish or as the banana foster, cut them in half lengthwise. If you are going to use caramelized bananas as a topping, cut them in slices 1 - 1.5 cm thick.

Caramelized bananas

Place a heavy wide frying pan over medium heat and melt in it butter. As soon as the oil begins to bubble a thin stream, stirring gently, stir in the brown sugar. When you have a homogeneous, smooth caramel, add bananas. If you have banana halves, place them flat side up. Sauté the bananas for 20 seconds, then sprinkle with half the cinnamon and cook for another 10 seconds.

Flip the bananas flat side down, pour over the glaze and sprinkle with remaining cinnamon. At this stage you can add alcohol or plain orange juice. Be careful if you decide to add liqueur, rum or brandy – they can erupt.

Water bananas caramel sauce every 20 seconds. Cook for about 1 minute. Before serving you can roll the bananas in chopped nuts, almond crumb, cereals.

Bananas Foster

In skovorode-flambe over medium heat, combine butter, brown sugar and cinnamon. Stir until then, until the sugar is dissolved. Add the banana liqueur and place the sliced bananas along with cut up.

When bananas become brown, carefully pour the rum or brandy. Wait until it breaks out if alcohol will not ignite – ignite it themselves. Wait until the flame is extinguished, add the caramel and lemon juice and pour her bananas.
