You will need
    • cherries;
    • fruit knife;
    • 1 tsp. powdered ascorbic acid;
    • water;
    • pan;
    • skimmer;
    • screen for drying or baking;
    • the baking paper.

Collect cherries, which has no defects – dark spots, dents, broken skin. Wash them thoroughly under running water. Remove the cuttings and dry the berries.

Cut each cherry in half – the smaller the size, the faster dried fruit, moreover it is easier to remove the bone.

Mix ascorbic acid with warm water. Make sure the powder is completely dissolved. The water will cool to room temperature. Put prepared cherries in a solution of water and vitamin C. Keep them there for 5 minutes. Carefully remove with a slotted spoon. This procedure will prevent darkening of the berries and will retain their beautiful color.

Drying cherries in the street

In hot and dry weather you can dry cherries in the street. This will require a special screen. Arrange cherries cut sides up on the gauze screen and close the frame. Take out the screen with cherry in the sun every day. When you remove the berries overnight, pre-keep it on 30 minutes in the oven, heated to 160ºС.

Drying cherries in the oven

Prepare a baking tray with baking paper. Lay the cherry halves cut sides down. Preheat oven to 165ºС. Put it in the pan with berries. The oven door does not close until the end, leave a small gap for air circulation. Keeping the temperature, dry cherries 3 hours. Then reduce heat to 135ºС and dry the berries for another 16-24 hours.
