You will need
- For sour cream sauce:

- - 5 medium mushrooms;
- - 1 onion;
- - 200 ml of 10%-nykh of cream;
- - 100 g of cheese, for example, DorBlu;
- - 60 g of butter;
- - 1/2 tsp. freshly ground black pepper;
- - 1/3 teaspoon of nutmeg and dried thyme;

- For the tomato sauce:
- - 500 g of tomatoes;
- - 120 ml of water;
- - 1 chili pepper;
- - 20 g coriander;
- - 1 tsp ground coriander;
- - 3/4 tsp salt;
- For lemon sauce:
- - 200 ml vegetable oil;
- - 50 ml of lemon juice and white wine vinegar;
- - 2 tsp of sugar;
- - 1 teaspoon of salt;
- - 1/2 tsp of mixed spices.

Cook the delicate sour cream sauce to grilled fish. Cut the cucumber in small pieces or grate it on a grater. Peel garlic cloves and crush in a mortar or a special press. Finely chop the dill, first freeing its branches from thick stems. Put vegetables and herbs in the sour cream, sprinkle it with some dried or fresh lemon zest, salt and whisk well with a whisk.

Make the original potato sauce for fried fish. Carefully attrite potatoes from the dirt, drop in boiling salted water and boil until tender in their skins. Let the roots cool, gently clean off the skin and mash the tubers with a potato masher or a blender to avoid lumps. Free from peel garlic, crush in any way in a slurry and add to soup. Dilute it with a mixture of olive oil and vinegar and dosolit to taste.

Cook spicy tomato sauce fried fish. Add the quartered tomatoes in a saucepan, pour in water and bring to a boil over high heat. Then lower the heat to minimum and simmer the vegetables for 15 minutes. Cool the resulting semi-liquid mass and wipe it through a fine-meshed sieve. Clean the chili pepper from seeds, grate, mash the coriander and salt and mix with tomato paste. There sprinkle chopped coriander and some more salt if it is not enough.

Connect for a simple lemon sauce for grilled fish lemon juice of vinegar in a glass jar, add salt, sugar and pepper and leave the lid until the food is dissolved. Pour in a bowl the vegetable oil, close it again and shake it a few times.
Useful advice
Instead of vinegar you can take a dry white wine, the sauce will get spicier.
