Lemon jam

Very simple version of homemade jam from lemons with a touch of vanilla. It can be used for desserts or just with tea. For this recipe you can make jam from oranges, limes or other citrus.

You will need:
- 8 lemons;
- 1.2 kg of sugar;
- 1 liter of water;
- 2 teaspoons of vanilla sugar.
Instead of vanilla sugar to flavor jam you can use a pinch of vanilla.

Lemons wash with hot water with a brush. Cut them into thin circles, and remove the pits. Put the fruits in a saucepan, cover with water and simmer for about half an hour on medium heat. Then reduce the heat, put in a pot the sugar and vanilla sugar, stir and cook for another 1.5 hours. Remove lemon rind with a slotted spoon.

Hot jam pour into pre-sterilized banks, cover with lids and leave to cool.
If you plan to eat the treat in the next few days, just leave it in a clean container, cool and store in the refrigerator.

Lemon marmalade with ginger

Delicious option - jam out of lemons with the addition of ginger root. Serve it with homemade pancakes and hash Browns - the taste of lemon and ginger goes well with fresh hot pastries.

You will need:
- 400 g lemon;
- 400 g of sugar;
- a small piece (about 5 cm) ginger root.

Lemons thoroughly wash. One of the fruit squeeze the juice, and the rest blanch in boiling water 5 minutes, then mince along with ginger root. Place the lemon puree in a saucepan, add juice and sugar, and stir. Cook the mixture for about half an hour on low heat. If the jam started to thicken, it is ready. Decompose the product in sterilized jars, close the lids and refrigerate.

The jam out of lemons with cinnamon

Aroma of lemons is well set off a variety of spices, for example cinnamon. Prepare the jam with cinnamon powder - the amount depends on your taste.

You will need:
- 7 medium size;
- 1 liter of water;
- 1 kg of sugar;
- ground cinnamon to taste.

Clean lemons scald with boiling water to remove excessive bitterness. Cut the fruits in small pieces, removing bones. Put the lemons in a saucepan, cover with water and bring to a boil. Then reduce the heat, cover the pan with lid and half cook the mixture.

Stir in the sugar, stir and continue cooking for another hour. Then stir in jam, ground cinnamon, stir, cook for another 5 minutes. Remove the pan from the heat and cool slightly. Jam place in a clean jar and roll covers.
