Leg of pork with cider and apples



You will need;
- 800 g of pork ham without bone;
- 800 g new potatoes;
- 5 sour apples;
- 10 pieces of prunes;
- 2-3 cloves of garlic;
- 8 leaves of sage;
dried cumin;
- 30 ml of olive oil;
- 50 g of butter;
- 2 tbsp. cider;
- 1 tbsp. chicken broth;
- salt and freshly ground black pepper.
If you don't have prunes, replace it with raisins or pulp of fresh plums.


Meat wash and make it a few notches. Clean the garlic and cut each clove into 4 pieces. Insert the slices of garlic into cuts in the meat along with leaves of sage. Preheat the oven. Baking pan with high sides smear with vegetable oil, put ham, salt, pepper and sprinkle with cumin. There also pour the Cup of broth.

Bake ham for 1 hour. When will the first 15 minutes, remove the meat and pour the cider. Repeat the operation every 15 minutes before baking. Apples peel, remove core and seeds and slice the flesh in large cubes. Put apples in a saucepan together with half the oil and cook over medium heat for 10 minutes. Then add them to the pan to the meat and bake the ham for another 15 minutes.

Potatoes wash and boil right in the skin. It needs to be quite dense. The prepared tubers are cut into 2-4 pieces, season with salt and pepper and sauté in remaining butter until Golden brown. Prepared ham cut into wide slices and serve with potatoes, apples and the cooking juice.
As a side dish to ham suitable mixture of roasted vegetables such as zucchini, eggplant and carrots.


Ham Bohemian



You will need:
- 800 g of pork ham without bone;
- 400 g rice;
- 3 bell peppers;
- 6 tomatoes medium size;
- 2 bulbs;
- 1 tbsp of ground paprika;
- 3 tbsp vegetable oil;
- salt and freshly ground black pepper.

Mix 2 tbsp oil and paprika, add salt and pepper. Brush this with a mixture of ham and place it on a baking sheet. Bake the meat in preheated oven for 50 minutes. Peel the onions and chop the rings. Tomatoes scald with boiling water, remove the skins and cut the flesh cubes. Bulgarian pepper clear from the seeds and partitions and cut into strips.

In a deep pan pour some oil, saute the onions, then add tomatoes and bell pepper and simmer on very low heat for half an hour. In the middle of cooking salt and pepper the vegetables, and pour in a few tablespoons of meat juice, obtained by baking the ham. Separately boil the rice in salted water. Serve sliced ham with vegetables and rice. This dish is best prepared right before serving.
