You will need
    • 1 Cup semolina;
    • 3 eggs;
    • 2/3 Cup sugar;
    • 500 ml of kefir;
    • 1 sachet of vanillin;
    • butter and flour for greasing the form.
Pour the yogurt in a deep bowl. Add the semolina and mix thoroughly. Leave the mixture for 40 minutes. Semolina should have a good swell.
Break into the Cup eggs and separate the whites from the yolks. Proteins put in the refrigerator for 30 minutes. Then whip the chilled whites with a mixer in the foam.
Add the egg yolks, sugar and vanilla. Whisk the mass with a mixer.
Add swollen semolina with yogurt whipped the yolks with the sugar and mix thoroughly. Then carefully spoon put the beaten egg whites and stir a lot so that they don't lose their volume.
Optionally, add to the dough raisins, canned or fresh cherries, pitted, dried apricots, candied fruit.
Grease with some butter a baking pan and sprinkle with flour. Put in it the dough and flatten with a spatula.
You can make a "marble" flummery. To do this, melt the dark chocolate in a water bath, cool slightly and a thin stream pour in dough in a spiral. Do not stir. Chocolate must pour when the batter is in the baking dish.
Preheat the oven to 180 degrees and place in it the form with the dough. Bake flummery about 45 minutes. Readiness test test with a match or toothpick. If it remains dry then it's cooked.
Ready flummery remove from oven and cut into serving pieces. Serve the pudding with sour cream or jam.
