You will need
  • Dough: 4-5 cups flour, half a liter of kefir (sour milk or yoghurt), 1 egg, 1 teaspoon sugar and salt, 1 teaspoon soda or baking powder, 2 tablespoons of sunflower oil.
  • Filling: cheese (Suluguni, brynza or martinski) – 0.5 kg

When all the ingredients are prepared, begin to prepare meals. The process of creation of furniture is not so difficult as it might seem at first glance.

Prepare the filling for khachapuri.
Cheese cut into small cubes, cover with cold boiled water and leave for a couple of hours in order to remove the excess salt. If you use fresh cheese, it is possible not to do that.

After that, drain the water and press the cheese and mash with a fork. Salted cheese or regular feta can just grate on a coarse grater.

Prepare the dough.
Sift the flour and mix with soda. Pour the sifted flour into a bowl, make a well in the middle and pour in the kefir (yogurt), add the egg, sugar, salt and sunflower oil. Elastic knead nekrutoe dough and put it in the fridge for about an hour.

Divide the dough into small-sized pieces and roll each piece into a round thin layer.

In the middle of each tortilla put the stuffing (it should be a lot – for each khachapuri, about 4-6 tbsp), gather the edges of the pellet in the center to make a sort of pouch with the cheese inside, and carefully desipite.

Flip the tortilla seam side down and roll out quite thin using a rolling pin.

Heat the pan, brush it with sunflower oil and fry the steaks on both sides in medium heat until tender. If frying khachapuri bulges, pierce the pellet from above.

Ready khachapuri grease with butter and fold like pancakes, pile. Now you can eat them, Bon appetit.
