You will need
    • 2 ½ cups flour
    • 3 fresh large eggs
    • Water
    • Salt
    • Flour for dusting
    • A clean linen cloth (towel)
    • Wide and deep bowl
    • A large wooden Board
    • Plug
    • Pasta machine or a rolling pin
For the dough for lasagna or pasta dishes will not be suitable for any flour, only durum wheat (durum, semolina). Mix the flour with salt and sift it into the bowl, so that it formed a high mound". Make on top of this "hill" indentation for the eggs.
You can break the eggs into the flour, but to avoid a situation when one spoiled egg ruins the whole products, it is better to use two separate bowls. If you decide to cook the dough just for the yolks, the flavor and color of the final product will only benefit from this. In this case, you will need two times more eggs.
Pour the egg mixture into the flour and start gently with a fork to knead the dough. Continue until until the flour completely absorbed the egg.
You can never tell exactly how much water you need for the test, because it is not known how many are ready to absorb the specific flour you choose. Add some water a little bit. The dough should be not too dry and not too sticky.
Sprinkle cutting Board with flour, turn the dough and start to knead it with your hands. You'll need about five minutes, until the dough become smooth, elastic ball.
Cover the dough with a damp cloth and leave to rise for 15-20 minutes.
Prepare the pasta maker. Of course, you can roll out the dough and with a rolling pin but a pasta machine will allow you to achieve much better results with less effort.
Put the regulator in the machine on the highest level. Divide the dough into four pieces and begin to "roll" the first of them. Press the dough at least three times, folding the layer in half and again passing it through the machine.
Begin to lower the thickness controller test less mark. Laminate layer at the level of "6", fold in half and press on the mark "5" and so until you reach the last mark. You'll have a long and thin layer of dough.
Put sheet on a lightly dusted flour surface "dust" it with flour, and do all operations on rolling with the remaining three pieces of dough.
The layers for the lasagna is ready.
